The Cabrales cheese and Picos de Europa
The Cabrales cheese is the most awarded among the Asturian cheeses. Its creamy texture, greenish colour and slightly spicy flavour are highly dependent on the different types of gathered fresh milk, the handling and production within the cheese factory and the aging period inside the natural cave. The artisan production of Cabrales cheese is due to the availability of green alpine pastures for the cattle and the shepherds and cheese crafters restless activity that helps to support a millennial heritage.
The cheese itself is linked with a specific territory (Cabrales county) that got remarkable natural atributes and provide the cheese with its name, nowadays under protected denomination. We must explore the environment the shepherds daily life has been connected with in order to value the experience of the cheese testing within the National Park´s core.
The itinerary lead us to the Pozo de la Oración view point, within the Cabrales boundaries, to get to admire (only if atmospheric conditions good enough) the beauty of the alpine scenery including Picu Urriellu/Naranjo de Bulnes. Arenas de Cabrales is our next stop rigth before carry on dirving all the way up and throughout the mountains to Tielve and Sotres villages in order to visit the latter one and a cheese aging natural cave before we try with the delicacy.
The fee includes Principality of Asturias local guide and natural and cultural environment interpreter.
Transportation. Entrance fue to the cheese factory and natural cave. Cabrales cheese testing. We suggest sport shoes, hat or cap, sun protection, rain coat, extra clothing, water and food suply.
