Cabrales cheese and Picos de Europa
Cabrales cheese is the best known of the forty types of this artisan product that are made in Asturias. Its creamy texture, its greenish color and its slightly spicy flavor depend on the types of milk used, the handling and production process in the cheese factory and the aging time in a natural cave, among other factors. This tour takes us, first of all, to Cangas de Onís for a technical stop (bathroom and coffee). We now continue on our way to the Estazadas Gorge, the ancient habitat of the Paleolithic man, where we find the imposing calcareous mountains of the Picos de Europa. Nature, art and landscape have coexisted here for centuries. Just a few minutes later, already within the Cabrales council, you will be able to admire the beauty of the alpine landscape of the Picos de Europa with its icon, the Picu Urriellu (Naranjo de Bulnes), in front, from the Pray River Well. It’s amazing!
After leaving Arenas de Cabrales behind, the excursion continues in search of the Cares river, and the meeting point of the three massifs of Picos de Europa, where we begin to ascend as if we were doing it towards the clouds… We leave Tielve aside and head towards Sotres, in the very heart of the National Park. This mountain town has been home to shepherds and their cattle since immemorial times, and the starting point for the most popular trekking routes in the entire region. Here we will visit a traditional cheese factory and a natural aging cave led by our cheese-making hosts who will tell you the details of the production process and answer your questions. Finally, we will taste the famous cheese in its different maturation variants accompanied by a glass of cider, because you also travel with your palate!
